Ingredients

Pork Ribs
  • 2kg Pork Rib Slab
  • 20g Paprika Powder
  • 10g Salt
  • 10g Pepper
  • 500g Hickory Barbeque Sauce
Baked Potatoes
  • 4 Pieces Idaho Potatoes - Medium-Size
  • 300g Sour Cream
  • 150g Spring Onions
  • 50g Butter
  • 50g Bacon Bits
  • To Taste Cracked Black Pepper
Slaw
  • 100g White Cabbage
  • 50g Purple Cabbage
  • 50g Carrots
  • 100g Mayonnaise
  • 50g Horseradish Cream
  • Juice from Half a Lemon
  • To Taste Salt
  • To Taste Pepper
  • To Taste Sugar

Methods

Step 1.

Preheat the oven to 220ºC in Fan Mode.

Step 2.

Marinate pork ribs with salt, pepper and paprika powder.

Step 3.

Place the marinated meat on the baking tray and add water till it touches the base of the ribs.

Step 4.

Cover the tray with foil and cook the marinated meat for 1½ hours.

Step 5.

Wash and wrap the Idaho potatoes in foil and cook them together with the pork ribs 40 minutes before the ribs are ready.

Step 6.

While the ribs and potatoes are cooking, prepare the slaw by mixing all the ingredients together, then set them aside in the fridge.

Step 7.

Remove the ribs and potatoes from the oven when they are ready. Next, marinate the pork ribs with barbecue sauce.

Step 8.

Cook the pork ribs for another 10 minutes to caramelise the sauce.

Step 9.

While the pork ribs are cooking, prepare the baked potatoes by slicing them in the middle ¾ way downwards. Next, add butter, sour cream and bacon on the potatoes, and spring onion and cracked pepper to taste.

Step 10.

Serve the pork ribs with slaw and potatoes.
